Gluten Free Quinoa Nut Butter Biscuits

I love these Gluten Free Quinoa Nut Butter Biscuits, they are so easy to make and really tasty. They are a nourishing high protein snack with the combination of quinoa and nut butter. Perfect for an afternoon or school lunch boxes.

Note: Quinoa flakes are not always available from the supermarket. The Macro brand has quinoa flakes at Woolworths, most health food stores will stock these. Alternatively, you could use rolled oats (however not gluten-free)

INGREDIENTS:

  • ¾ Cup of Quinoa Flakes
  • 1 cup of brown rice flour or other gluten-free flour (I prefer wholemeal spelt flour but not GF)
  •  ½ cup of desiccated coconut
  • ½ cup of peanut butter or other nut butter
  • 3 tablespoons of coconut oil (melted)
  • 1/3 cup of maple syrup
  • 1/3 cup of cacao nibs or raisins
  • 1 teaspoon of vanilla

Note: If your peanut butter or nut butter is dry you may need to add another tablespoon of coconut oil.

PROCEDURE:

  1. Preheat the oven to 180 C
  2. Mix all ingredients in a bowl
  3. Take a tablespoon of mixture and roll the mixture into balls and press lightly with a fork, place them on a lined baking tray
  4. Bake for 15 – 20 minutes or until golden
  5. Allow to cool on a cooling rack
  6. Store in an airtight container
