Chai Spiced Raw Bars

I love a good cup of chai, with this in mind I felt inspired to create some Chai Spiced Raw Bars. These tasty morsels use some of the key chai spices, as well as fruit, nuts and other nutrient-dense ingredients. The bars are also raw so maintain their essential nutrients and enzymes.

Gluten-Free, Dairy-Free, Refined Sugar-Free, Raw

INGREDIENTS:

  • 1 cup almonds (raw)
  • ½ cup of sesame seeds
  • 1 cup raw sunflower seeds
  • 2 teaspoons ground cinnamon
  • 1 thumb of finely grated fresh ginger
  • 2 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • ½ teaspoon of salt
  • ½ cup of coconut oil (soft or gently melted)
  • 2 tablespoons of honey (heaped)
  • 2 tablespoons of nut butter (optional)
  • ½ cup of dates (soaked in hot water to soften and then drained)
  • ½ cup raisins
  • ½ cup of goji berries
  • ¼ cup of ground flaxseed

Chocolate Topping (optional)

  • 1 tablespoon of cacao butter
  • 2 tablespoons of coconut oil
  • 3 tablespoons of raw cacao
  • 2 tablespoons of maple syrup (or sweetener of your choice)

PROCEDURE:

  1. Line a slice tray with baking paper – set aside.
  2. In a food processor add: almonds, sesame seeds, sunflower seeds and coconut, blend until the seeds and nuts are finely chopped.
  3. Add all the remaining ingredients and blend until the mixture forms a firm paste
  4. Press the mixture firmly into the greased slice tray. You can use another piece of baking paper on the top to ensure the mixture is pressed down evenly.
  5. Freeze until firm

Chocolate Topping (optional)

  1. Gently melt cacao butter and oil in a pot, add the remaining ingredients and stir well.
  2. Set aside for 10 minutes and then drizzle chocolate topping over the frozen bars.
  3. Leave the bars out of the freezer for around 10 minutes before slicing into bars (otherwise they are very difficult to cut)
  4. Store the clusters in an airtight container in the freezer.
