Apricot Coconut and Lemon Raw Balls

I love these little raw balls of goodness, not only are they healthy but they are very tasty too. When recipe testing this one. I added the lemon as a last-minute thought and it really adds a nice twist to the flavour. The recipe for Apricot Coconut and Lemon Raw Balls as as follows:

INGREDIENTS:

  • ¾ cup shredded coconut
  • 1 cup almonds
  • 1 cup sunflower seeds
  • 1 cup dried sulphur free apricots (brown in colour)
  • 1/2 cup dates chopped
  • 1/3 cup coconut oil
  • Grated rind of 2 lemons
  • 1 – 2 tablespoon of lemon juice
  • 1/2 cup maple syrup or honey
  • ½ cup chia seeds

PROCEDURE:

  1. Blend shredded coconut, almonds and sunflower seeds in a food processor until they are a coarse flour consistency. Add dates and apricots and blend until smooth.
  2. Add all remaining ingredients and blend until smooth.
  3. Use a heaped dessertspoon of mixture and roll into small balls. Roll the balls in desiccated coconut and refrigerate until serving.
