Apricot Coconut and Lemon Raw Balls
May 05, 2019I love these little raw balls of goodness, not only are they healthy but they are very tasty too. When recipe testing this one. I added the lemon as a last-minute thought and it really adds a nice twist to the flavour. The recipe for Apricot Coconut and Lemon Raw Balls as as follows:
INGREDIENTS:
- ¾ cup shredded coconut
- 1 cup almonds
- 1 cup sunflower seeds
- 1 cup dried sulphur free apricots (brown in colour)
- 1/2 cup dates chopped
- 1/3 cup coconut oil
- Grated rind of 2 lemons
- 1 – 2 tablespoon of lemon juice
- 1/2 cup maple syrup or honey
- ½ cup chia seeds
PROCEDURE:
- Blend shredded coconut, almonds and sunflower seeds in a food processor until they are a coarse flour consistency. Add dates and apricots and blend until smooth.
- Add all remaining ingredients and blend until smooth.
- Use a heaped dessertspoon of mixture and roll into small balls. Roll the balls in desiccated coconut and refrigerate until serving.
